  • A squeeze of lemon juice (you could even add the zest too!) 

  • Red pepper flakes (optional) 

Instructions: 

  1. Toast the slices of bread until golden brown. 

  1. While the bread is toasting, mash the avocado in a bowl and mix in a squeeze of lemon juice, salt, and pepper. 

  1. Spread the mashed avocado onto the toasted bread. 

  1. Top with diced tomato and feta cheese. 

  1. Sprinkle with red pepper flakes if you like a bit of heat.

Note: watermelon is not always budget friendly; it depends on the time of year, but during the Summer you should notice the prices are less.

  • 1/2 cup of feta cheese, crumbled 

  • 1/4 cup of fresh mint leaves, chopped 

  • 1 tablespoon of olive oil 

  • 1 tablespoon of balsamic vinegar 

  • Salt and pepper to taste 

Instructions: 

  1. In a large bowl, combine the watermelon cubes, feta cheese, and chopped mint leaves. 

  1. Drizzle with olive oil and balsamic vinegar. 

  1. Season with salt and pepper to taste. 

  1. Gently toss the salad to combine all ingredients. 

3. Easy Veggie Wraps 

Veggie wraps are a versatile and quick meal option. You can customize them with your favorite vegetables and spreads, making them perfect for lunch or a picnic in the park. If you’re feeling fancy, you could make the wraps and hummus from scratch to really bring it to the next level!

  • 4 large tortilla wraps 

  • 1 cup of hummus 

  • 1 cucumber, sliced into thin strips 

  • 1 red bell pepper, sliced into thin strips 

  • 1 carrot, grated 

  • 1 cup of spinach leaves 

  • 1/2 cup of shredded cheese (optional) 

Instructions: 

  1. Lay out the tortillas on a clean surface. 

  1. Spread a generous layer of hummus on each tortilla. 

  1. Arrange the cucumber, red bell pepper, carrot, and spinach evenly on each tortilla. 

  1. Sprinkle with shredded cheese if using.

  • 2 tablespoons of honey 

  • 1 teaspoon of chia seeds (optional) 

Instructions:

  1. Sprinkle chia seeds on top if desired.

  • 1/4 cup of black olives, sliced 

  • 1/4 cup of grated Parmesan cheese 

  • Salt and pepper to taste
